In this respect, Real Jamón – via its leading practitioner, Florencio Sanchidrián – has created a team of professionals and a Ham Cutters' School that guarantees that all parts are sliced by hand. You will not find better hand-sliced ham or shoulder ham on the market than those offered by Real Jamón, as we take painstaking care over the fineness and the size of each slice that enables it to be taken in the hand, put in the mouth and its exquisite flavour enjoyed.

At the Barcarrota School – immediately after cutting a piece of ham or shoulder ham, the net weight of which is approximately 3 kilos – the slices are placed one by one in the plastic packs, designed especially for Real Jamón. Each pack contains product from the different cuts of all the pieces, i.e. maza, contramaza, punta, and slices are also placed in the pack in such a way as to ensure that they are not overlapping onto each other, this facilitating their consumption. Our vacuum-pack system guarantees that the most sought-after delicacy in Spanish gastronomy is preserved under the finest conditions which, together with careful placing on the dinner table, ensures an unforgettable experience for the palate.

From the pasture to the mouth The entire process above is complemented by using the golden rules for fine enjoyment of Real Jamón products …

The golden rules for fine enjoyment of our products are:

  1. The pack must be kept in the fridge, where fruit is normally kept, i.e. at between 5 and 10 degrees.
  2. The ham should be consumed at room temperature, and so 20 minutes before serving and while still in the pack, it needs to be placed under a tap of hot water for around 2 minutes.
  3. Open the plastic pack and place the ham on a dish or in a bowl of a size that ensures no slice is overlapping over another, as this is the best way to appreciate its colour and texture.
  4. A gourmet product such as the one you now have in your hands can be eaten on its own or accompanied by tender, neutral-tasting bread so that this does not alter the flavour of the ham or the shoulder ham.
Drinks In harmony with Real Jamón products …

A Real Jamón product should be accompanied by a drink of high quality – without doubt, Fino de Jeréz sherry, perhaps the best sherry, although also other top quality sherries such as Fino Quinta, Tío Pepe or Fino la Ina. It also goes fantastically well with a fine crianza red wine.

In exceptional cases, where the ham has been cured for many years, it can be accompanied by a reserva wine. However, as the Royal Spanish Academy of Gastronomy has mentioned on many occasions, ham can be consumed with different drinks in order to arrange a tasting session to enable one to harmonize it with what one likes the most.

Real Jamón is probably the best and most expensive hand-sliced and vacuum-packed Iberian ham. It does, however, offer the best value for money on the market.
